这样的大锅熬菜,饭店再做也做不出农村大锅菜的味道,这是为什么呢?你先看下下图短视频是不是就明白了呢?
邯郸大锅菜,现在在市区有不少餐馆,包括很多规模饭店的菜谱上,都有大锅菜这道起源于农村红白喜事上招待来宾的农家菜。可是不论哪一家高级饭店还是路边快餐店,没有一家能做出地地道道的农村大锅菜的味道,这些“李鬼大锅菜”,充其量是熬菜或者叫烩菜而已。真正的大锅菜只能是农村红白喜事上的才是正宗。
大锅菜不摘菜,就是说,冬瓜,白菜,灰的白,这些最为家常普通平常的菜为主菜,家里过红白喜事的事主,往往是哪一种菜在当时更便宜,就买哪一种菜。比如冬瓜便宜了就买一车冬瓜,白菜便宜了就买一车白菜。葱姜蒜,花椒八角茴香酱油醋,有了这几味基础调料就完全可以了。像现代的新型调料,鸡精味精料酒有无都可以,白糖不放。香菜有就备点,没有拉倒。粉条是不可少的,当然还可以有豆腐。
以上是大锅素菜。若做荤菜,就以猪肉为主,几乎没看见谁家用牛羊鸡肉。俗话说,要吃走兽,还是猪肉,猪肉和蔬菜好像有血缘关系,很容易互相入味成为一家亲。对了,不管是素菜还是荤菜,必须要有油盐呀!这用于做大锅荤菜的猪肉,要先在开水里焯半个小时,一是猪肉去除草气,二是猪肉处在半熟状态,容易切片。因为红白喜事都是村里的临时厨下拼凑的,有一个主厨,剩下都都是来帮忙的邻居。
切肉的切菜的,剥蒜的剥葱的,这些人一边干活,手不停,嘴也不停,互相挤兑荤骂,小辈的拿叔辈的老婆过嘴瘾;叔辈的就拿侄辈的老娘过嘴瘾。好像人人都是脱口秀业余演员,谁都能来上两句。平时言语不多的人,就蹲在大锅前面烧火,烧火有用炭块的,更多的是用柴禾,因为现在农村里不缺下房的旧木头,有锯有劈斧,这一群熬制大锅菜的人就像一场戏,都是男演员,没有女角。
做这样的大锅菜程序简单:炼油,花椒八角茴香放进去,爆炒一下,俩人抬着切好的白菜或者冬瓜筐子,一下就倒一锅,有人拿着大铁锹翻动几下,喊道,来一桶水,有人从水管里接一桶水,哗啦就倒进去了,灶膛里的烈火熊熊。一会儿菜熬下去了,俩人抬着菜筐子,又倒进一筐,再加水。大厨负责加盐。啥时候大锅菜满了,不再加菜,如果是荤菜,这个时候,就把切好的一盆子猪肉倒进去,葱姜蒜放进去,酱油醋料酒等倒进去。
忙了这一阵,都手闲下来了,开始抽着烟,第二场脱口秀比赛开始了。嘴笨的小辈说不过叔辈,就举起巴掌朝叔辈的头上打,叔辈就一边躲一边跑,叔辈头上挨着打,嘴里还嘟嘟喃喃在侄辈娘的下半身过瘾,这种场合,叔辈是不能还手还击。你嘴上过了瘾,头上就得受点疼。叔辈要还手,就会遭到不齿,这也叫一种公平吧!此时,这俩人成了主角,剩下的人都是看客围观起哄煽风点火。
这个时候,大锅里翻花,忽然有人说熬干锅了,又有人接半桶水倒进大锅熬菜里;忽然又有人喊,该放粉条了,一会儿开饭时,粉条还不烂呢?有人说,还早点,现在放粉条一会儿就浆糊了。如果是吃饭的人多,估计这一锅菜不够吃,就用马勺把快熬制好的大锅菜掏到预备好的大瓷缸里,从新加菜加水加肉,再把锅填满。油少了,可以放明油,炼制好的半盆油就倒进了锅里。
在这个过程中,灶膛下的烈火一直就没有停,吹风机打开,当熬菜锅里再次翻开了花,拔掉吹风机,火不停一直熬制,大厨会继续品尝加进去各种调料。当快要开饭的时候,把浆泡好的粉条倒进大锅里,豆腐丸子倒进大锅里。
要开饭了,这时才停下烧火,大锅边放着勺子,或者是掌勺的,一人一碗,都端着自己找地方,或蹲着或坐着,院子里,过道里,每人端着一碗大锅菜吸溜吸溜吃得津津有味,吃完了,再去锅里舀。大厨看大锅里菜少了,就从大瓷缸里朝锅里舀,然后拉开吹风机,只几分钟大锅里就咕嘟咕嘟翻花,丸子豆腐放进去……
这样的大锅菜,从早晨开始,到中午开饭,最少也熬制了四个小时了。明白了么?邯郸农村大锅菜的味道,主要就在火上,火大,熬制时间长,还就是锅大,各种调料蔬菜肉,彻底入味了,成为了真正的一锅炖。
村里过会熬的大锅菜,也不行。只有红白喜事上的大锅菜最为纯正,白事上的大锅菜是邯郸农村大锅菜里的极品大锅菜。

大锅菜之天下之一锅
曾经这位老板使用的锅号称天下之一锅,一锅能做两三千斤,盛出三四千碗,每天吃饭的人数达到三四千人,结果每天造成交通拥堵,影响市容,被迫又重新选址开的门店。
而这位老板现在用的锅是口径1米5的锅。在这里开门营业也有三年之久了。
老板光做大锅菜也有十年之久!
用料之讲究
老板每天光炖大锅菜,每锅猪肉都得二百多斤,他所使用的是煮熟的五花肉,而不是生肉煸炒的。煮好的五花肉,然后在过油,切片,才开始进行煸炒。这样吃起来的瘦肉不柴,反而更香。
所选用的白菜也是每天所送过来的新鲜白菜,一锅大锅菜能用六百多斤的大白菜。
炖这一锅大锅菜需要三个小时左右。从肉下锅就要开始不停的搅动,特别是下入白菜之后,更是要不停的搅动,要不断的把下面的白菜翻到上面来,这没点力气是真的不行。
白菜炖的差不多的时候然后在放入豆腐,放入粉条。这样的大锅菜才会有灵魂。
老板所售卖的价格是十块钱一碗,管饱,馒头跟小菜都是不 *** 的。
这炖出来的一锅大概能出一千多碗,光这一个每天的营业额就能达到一两万。
