所需食材:
二荆条辣椒、入河南新一代、清油、高度白酒、大葱、洋葱、生姜、小葱、八角、花椒、菜籽油、白芝麻
*** 步骤:
之一步:称取辣椒。选取二荆条辣椒300克,再加入河南新一代100克(不辣的和辣的两种辣椒,比例为3:1,具体请根据自己喜欢的辣度进行调整),用勺子搅拌均匀备用。
第二步:往拌匀的辣椒粉中加入少许熟的清油,用勺子来拌均匀,只要辣椒粉表面潮湿就可以了;然后再加入少许高度白酒(让辣椒的香味和辣味更好地释放),继续拌匀备用。
第三步:准备炸葱油的料。大葱切成段,生姜切成片,半个洋葱切成丝,再准备一小把小葱、两个八角和少许花椒。
第四步:把锅充分烧热,加入1200克菜籽油(油和辣椒的比例为3:1),然后把所有的葱料冷油下入锅中,期间不断用勺子搅动;接着中火慢炸,炸出这些材料的香味;最后把所有食材炸干炸香、炸至金黄再全部捞出,留下清亮的菜籽油。
第五步:继续烧至油温差不多160°的时候,加入一把白芝麻,并用勺子搅动搅动,让芝麻受热均匀;炸至芝麻金黄,立即关火(此时油温差不多180度)。
第六步:把熬好的油浇入到辣椒粉里面,再用勺子搅拌搅拌;然后继续加入熬好的菜籽油,边加油边搅拌;最后把剩下来的油全部加进来并不断搅拌。值得注意的是,激辣椒油,油温更好是在180-190度之间,更高不能超过190°。
第七步:刚 *** 好的辣椒红油,不要立马使用,更好放置一夜或者24小时,这样辣椒油的香味会更加醇厚,颜色也会更加红亮。

1.二荆条辣椒味道微辣,但是颜色红亮,口感比较香醇,炸出来的辣椒红油颜色更加好看;河南新一代比较粗一些,味道中辣,如果喜欢吃更辣一点的朋友,可以使用朝天椒;请根据个人口味选择。
2.拌辣椒粉的时候更好选择油拌,尽量不要选择水拌,这样炸出来的辣椒油才更香。
3. *** 辣椒红油更好选择菜籽油,一定要把菜籽油练熟了,不然会有一股生油的味道。

4、300克辣椒面放入300克糊辣椒面,再放入三勺食盐、白胡椒粉、两勺白糖,充分搅拌均匀,再放入100克熟白芝麻,再放入一半的高度白酒一半的凉水,把辣椒面打湿。高度白酒可以增香延长保质期
5、锅烧热,放入花生米,全程开中小火,把花生米炒到噼里啪啦的声音再炒一两分钟,炒香以后盛出晾凉备用。大蒜切片、生姜切丝,大葱切段,香菜切段。花生米倒入食品袋中,用擀面杖碾碎
6、碾碎的花生碎倒入辣椒面中,搅拌均匀。再分在两个碗中。热锅倒入菜籽油,油温升至七成热,放入前面在准备好的香料,熬制微焦再放入八角、桂皮、香叶、花椒,熬香以后捞出所有香料
7、然后把油加热到七成热,再把热油分三四次泼在辣椒面上,然后搅拌均匀,让它受热均匀。油泼辣子就做好了
8、食用辣椒,能增加饭量,增强体力,改善怕冷、冻伤、血管性头痛等症状
