在菜市场上买肉,经常买到带皮的猪肉,有时候做菜并不用猪皮,很多人习惯把猪皮片下来,直接扔掉太浪费,存着又不知道怎么吃。今天小易来分享猪皮的另一种做法,步骤并不复杂,就是有点费时间,即便如此,在尝到美味的那一刻,一切都值了。
所需食材:
肉皮、食用油、青椒、红椒、葱、生姜、料酒、蚝油、盐、鸡精、明油
*** 步骤:
之一步:把猪皮取出来加水浸泡开,清理掉表面的毛毛,泡开后充分清理干净。然后往锅中加水,猪皮冷水下入锅中煮10分钟左右捞出。
第二步:耐心地用刀刮去猪皮上的油脂,完全清理干净后切成小块,然后铺到篮子里,放到太阳底下晒干(也可以放在通风的地方晾干),晒至猪皮呈透明、硬邦邦的状态即可。
第三步:冷锅中加入足量冷油,把猪皮放进来,开最小火浸泡炸,期间要用铲子微微翻动。炸的过程中,随着时间越长,猪皮表面会不断发起小泡泡。炸80分钟左右,猪皮就完全发好了,然后捞出。
第四步:随手抓几块发好的猪皮,放入碗中加水浸泡两个小时左右,完全泡软后切成条;青椒和红椒切成块备用。
第五步:锅里放入少许食用油,放入葱姜小火爆香后把切好的猪皮下入锅中翻炒均匀。
第六步:往锅中淋入适量料酒,再把青红椒加进来大火翻炒,然后再加入适量蚝油、盐调味,炒匀后加入适量开水继续煮3分钟,出锅前加入鸡精、明油炒匀,最后装盘即可。
*** 关键点:
1.猪皮一定要把油脂清理干净,能有多干净就清理多干净,这一步会影响后面的 *** 效果。
2.炸猪皮的时候用冷锅冷油,请小心防止油溅,全程开最小火, *** 时长根据猪皮的状态稍有不同。

2、 今天老刘就来分享一下“脆皮猪油膘”做法,喜欢的朋友可以先收藏,有空自己试一下。
3、下面开始介绍所需要的食材:
猪油板、白糖、玉米淀粉、面粉、鸡蛋
4、买回来的肥油膘去除猪皮,再把猪肥油切成小块备用。碗中放入三勺面粉、一勺玉米淀粉、打入一个鸡蛋,搅拌均匀,然后少量多次地加入清水,调成稍粘稠的面糊,再淋入少许食用油,淋入食用油做出来的脆皮糊,炸出来的东西更酥脆,搅拌均匀
5、再把切好的肥油板放入面糊中,揉抓均匀,让肥油板上均匀地裹上一层脆皮糊。油温五成热,放入裹好的面糊的肥油膘,炸制表面色泽金黄就可以捞出来了。油温再次升至七成热,把猪油膘放入锅中复炸一下,炸三十秒就可以捞出来了
6、锅中放入清水,再放入多一些的白糖,大火把白糖熬到融化,再熬到气泡变小,微微发黄,放入肥油膘,快速翻炒,就可以出锅了。小时候吃这个甜甜的油渣,已经很好了,现在这种菜很少有人吃了
7、肥肉能够供给人体更高的热量。脂肪还含有人体需要的卵磷脂和胆固醇。
